Why we love it

A luxuriously appointed estate set amongst rolling vineyards and native bushland just two hours’ drive from Sydney. Picture a place where great food and wine provide the perfect recipe for relaxation at Restaurant Botanica. Where Spa Anise adds to the feeling of rejuvenation and revitalisation. Where appreciating life comes as naturally as appreciating the latest vintage.

Food

Restaurant Botanica mixes modern Australian dining with a regionally distinctive style using fresh picked Hunter Valley ingredients. Dining at Restaurant Botanica begins with the belief that great chefs must be great gardeners. The menu delivers produce picked fresh that morning with seasonal dishes effortlessly matched with wines from the Hunter Valley.

Restaurant Botanica offers a plant-based menu in addition to the regular menu for both lunch and dinner. The chefs are also happy to cater for specific dietary requirements.

Destination

While the Hunter Valley is recognised as a world-class wine and food destination, the region is actually made up of a number of smaller subregions. Each has its own secrets to reveal and subtle nuances in terms of wine characteristics. You can discover them individually or as part of the Hunter Valley wine and food trail.

It’s only a 40-minute drive from one end of the Hunter Valley to the other so you can easily take the time to explore some of the small villages, larger towns and other hidden gems around the region.

Experiences

A range of experiences have been designed to make the most of the 22 acres of grounds and vineyards on offer and the picturesque hunter region. From beautiful picnic spots, where the team will set up your private picnic with a lovely rug and pillows, ideal for relaxing long into the afternoon to your very own helicopter tour of the Hunter Valley through to Newcastle. Starting in the Hunter Valley you will take off from the Cessnock Aerodrome and fly above the myriad of vines, olive groves, wineries and the Brokenback Mountain Range. From here you will pass over Lake Macquarie, Australia’s largest coastal salt water lagoon then along the spectacular Newcastle coastline before returning back to Cessnock.
